Pipeño is the traditional, low intervention, method of winemaking in Chile, dating back to the late 16th century. The Aupa is a blend of 80% Pedro Ximenez (PX for short) and 20% País from a 120-year-old, dry farmed vineyard. This is orange wine in disguise, the color coming from the dark red hued Pais and the nutty savory finish and texture from the PX.
