Chablis, aka Chardonnay, but from the mineral rich kimmeridgian soils of northern burgundy and made in the steely unoaked style we love. This ‘baby’ Chablis, from organic producer Domaine Passy le Clou hits all those seashell (from ancient seashell fossils still found in the soil) and citrus notes associated with classic Chablis. While oysters are the archetypical pairing, it equally adept with cheese.
